I’m Emily!

I’m a Registered Dietitian and the owner of Emily Cornelius Nutrition. I’ve helped over 2,000 women with prediabetes and insulin resistance lower their A1C, reverse insulin resistance, and lose weight without crash diets, extreme restrictions, or giving up carbs completely.

Everything changed in my practice when I started teaching women how to connect what they were seeing on their glucose monitors with nutrition. When women can actually see how their bodies respond to food, everything clicks.

In the first 90 days of working together, my students lose an average of 10–20 pounds, decrease their A1C by at least 0.5%, and lower their triglycerides if they are elevated. They’re reversing insulin resistance, feeling in control of their cravings, and getting their energy back—all without strict dieting.

When I’m not helping women improve their blood sugar, I love to travel, cook, hike, play pickleball, go to church, and try new workouts (my current obsession is Burn Boot Camp).

A fun fact about me: when I was 12, I fixed the gap between my front two teeth using rubber band hair ties. My parents couldn’t afford braces, so I came up with the idea to loop tiny plastic hair ties around my two front teeth to slowly pull them together. Somehow… it worked—and I no longer have a gap between my teeth.

I guess I was destined to be a risk-taking entrepreneur from a very young age.

These days, I just use that same curiosity and problem-solving mindset to help women finally understand their bodies, balance their blood sugar, and feel confident eating carbs again using Stelo!
